After years of eating fresh Mexican food all over the Southwest, Matt Burke decided it was time to bring fresh Mexican to Seacoast New England. Exeter, New Hampshire, with its strong community of hungry souls, seemed like the perfect place.

With months of renovations and decorating complete in January ‘08, Las Olas now offers a clean, and bright environment to enjoy the freshest Mexican food around. Inspired by the waves of Central America, bright, vibrant colors and wave-shaped tables welcome individuals and families alike as they enter Las Olas. Speedy counter service allows customers to select made-to-order food and move to either table seating or a space at the wave-designed, counter height bar. Watch our staff cook and prepare your food, in our open concept kitchen while you eat.

Our food is prepared fresh daily with ingredients delivered straight from the markets of Boston. We have made a commitment to search for local meats and produce such as our Chorizo sausage from Kelly Brook Farm in Greenland.
